1-1/4 pounds sweet potatoes, peeled, cut into small cubes 2 teaspoons trans-fat free spread (you can use butter if you want but will change calorie amount) 1/2 teaspoon grated fresh ginger 1/8 teaspoon salt Minced chives or scallion greens (optional)
